Talking Turkey

donna pick 001Tomorrow, roast turkey will be the Thanksgiving featured attraction for nearly 88 percent of Americans, according to a survey by the National Turkey Federation. Of course, depending on personal traditions, we’ll pair the bird with regional or cultural specialties such as lasagna, sauerkraut, macaroni and cheese or as in the case of my family–seafood gumbo. But for most of us, on this one special thursday each year, turkey reigns as the holiday centerpiece.
This is my sister Carolyn’s delicious recipe for Roast Turkey with Mexican Chorizo Dressing. She prepares the bird and the stuffing separately, per our grandmother’s Gulf Coast tradition of  fragrantly “stuffing” the turkey with celery, onions and citrus halves before baking the dressing in casseroles.
